Pastina Soup aka “Penicillin Soup” -6 cups low-sodium chicken broth -1 medium onion, sliced into large pieces. -2 carrots, peeled and sliced into large pieces. -2 celery ribs, sliced into large pieces. -Salt to taste -1 1/2 cup pastina or any tiny pasta variety. -Grated parmesan cheese or homemade croutons for topping (optional) Add chopped veggies and chicken broth to a pot. Bring to a boil and then lower the heat and let simmer for 20-30 minutes
